Burrito bowl with adzuki bean sprouts

A delicious and healthy way to incorporate vitamins, minerals and flavour into your day. Use your homegrown Sydney Sprouts and fresh ingredients for a meal the whole family will enjoy.

Burrito Bowl with Adzuki Bean Sprouts

Serves 4 

Ingredients 

For the salsa: 

  • 2 tomatoes, finely diced 
  • 1 small red onion, finely diced 
  • ¼ teaspoon cumin 
  • 1 tbs coriander leaves, finely chopped 
  • Juice from 1 lime 

 For the dressing: 

  • 4 tbs olive oil 
  • 4 tbs apple cider vinegar 

For the rice: 

  • 1/3 cup brown rice 
  • 1/3 cup wild rice 
  • 1 clove garlic, minced 
  • 1 1/3 cup vegetable stock 
  • ¼ cup coriander leaves, chopped 
  • 1 tablespoons lime juice 

4 wholegrain wraps 

2 cups adzuki bean sprouts 

1 ripe avocado, mashed 

3 cups baby spinach 

1 cup corn kernels 

4 tablespoons Sydney Sprout traditional roasted salad seeds 

1 lime, cut into quarters 

Method 

  • Preheat oven to 180°C 
  • For the salsa, add all ingredients into a small bowl and mix until combined and set aside 
  • Prepare the dressing by combining the olive oil and apple cider vinegar in a small bowl, and set aside 
  • To prepare the burrito bowl wraps, place each wrap into an oven-proof bowl and mould it to the shape of the bowl. Place the bowls into the oven and cook for approximately 10-12 minutes until the wraps are crisp, golden and hold their shape when lifted out of the bowl 
  • To prepare the rice, place the brown and wild rice, garlic and vegetable stock in a saucepan. Bring to boil, then reduce heat and simmer for 25 minutes until the stock is absorbed, and the rice is cooked through 
  • Remove rice from heat and fluff up with a fork. Allow to cool slightly then stir through lime juice and coriander leaves 
  • To assemble, divide the adzuki bean sprouts, avocado, baby spinach, corn kernels, salsa and rice into each of the burrito bowl wraps. Drizzle with the dressing, sprinkle with Sydney Sprout traditional roasted salad seeds and add a wedge of lime on the side. Serve immediately.
