Ingredients (serves 4)
- Sui mi ya cai (preserved mustard greens)
- 1 tsp vegetable oil
- Noodle and bean sprouts - use 500g of fresh white noodles (medium thickness) for a classic dish. For a lighter, healthier option, replace half the noodles with 3 cups of freshly grown bean sprouts. Serve the sprouts alongside the noodles for added crunch, freshness, and nutrition.
Dan dan sauce
- 2 tbsp tahini
- 1.5 tbsp Chinese chilli paste in oil
- 4 tbsp light soy sauce
- 2 garlic cloves, minced
- 3 tsp white sugar
- ½ tsp Chinese five spice powder
- 1 tsp Sichuan pepper powder, preferably freshly ground
- 3 tbsp chilli oil
- ¾ cup (185ml) chicken broth
Pork topping
- 2 tsp hoisin sauce
- 1 tsp dark soy sauce
- 1 tbsp Chinese cooking wine
- ½ tsp Chinese five spice powder
- 1 tbsp vegetable oil
- 250g pork mince
- ½ cup spring onion white side, chopped
To serve:
- 1 cup snow pea
- ½ cup spring onion (green side)
- 1 tbsp *Fried garlic
- 1 tbsp *Crispy Shallots
- 2 tbsp Salad Seed
Method
Dan dan sauce
- Mix all ingredients except oil and chicken stock. Then gently stir in oil and stock – oil should be sitting on surface. Set aside.
Pork topping
- Mix together hoisin, soy, Chinese wine and five spice
- Heat oil in a skillet to wok over high heat. Add pork and cook, breaking it up as you, until it changes from pink to white. Add sauce and cook for 1 minute, then transfer into a bowl.
Noodle & bean sprout
- Bring a large pot of water to the boil.
- To prepare the bean sprouts: briefly blanch in boiling water for 5 seconds, then drain.
- Then cook the noodles as per packet directions
- Drain & serve
Assemble
- Place ½ noodle & ½ bean sprout in a bowl.
- Top with pork and sSui mi ya cai.
- Gently pour over the dan dan sSauce .
- Sprinkle spring onion, pea sprout, fried garlic, crispy shallot, salad seeds to serve.
- To eat, mix it all up to coat the noodles with sauce, then enjoy!
